Blueberry Lemon Cheesecake Bars

Blueberry Lemon Cheesecake bars



  • 1 cup nuts of your choice (I usually use an almond/ cashew or almond/ hazelnut blend)
  • 1 cup shredded unsweetened coconut
  • 3/4 cup pitted dates
  • pinch of salt


  • 2 cups cashews
  • 1 cup fresh blueberries
  • juice of two lemons and zest of one
  • 1 cup shredded unsweetened coconut
  • 3/4 cup melted coconut oil
  • 1/3 cup maple syrup or melted honey


  1. Soak cashews for filling for 5-6 hours or preferably overnight
  2. Line a 9X9 inch tin with parchment paper and set aside
  3. Place all of base layer ingredients in food processor/ blender and process until it forms a sticky, chopped mixture
  4. Transfer base mixture to pan and press down with fingers or a spatula until it is packed down evenly (wet hand or spatula to prevent sticking)
  5. Place pan in fridge
  6. Measure out and place all filling ingredients into blender. Blend until nice and creamy
  7. Remove base from fridge and pour filling into pan, using a spatula to smooth it out
  8. Return bars to fridge and let set for 5/6 hours, or until mixture is firm to touch
  9. Slice into squares and dive into the lemon berry deliciousness
    * bars should be stored in the fridge until ready to serve and will keep in an airtight container for up to five days

Don't be afraid to mix up the flavors a bit, experiment with other fruits, citrus and spices! Some different flavour combos I enjoy are cherry & lime or raspberry & cacao.
